Need help locating cached server files on client computer

This is my first time posting here, so hopefully this is the right place to request help with this problem.

What I need help with is this. I have a network with a Windows 2012 file server with mostly Windows 8 clients. The users in Active Directory have their Home folders directed to a path on the server (mapped "U:" drive in the user's AD Profile tab) and then their "Documents" folder is redirected to their server shared folder (So their "Documents" folder is the same location as the mapped "U:" drive). In the past file servers have been replaced with different server names, so the Home folder needs to be reconfigured to the new server's path (In the AD User's profile). Unfortunately, some users had not been reconfigured in AD and still had the now non existent server path directing to their local "Documents" folder. However, they could still open "Documents" and edit and create new folders and files via a cache of some sort. My question is where is the location of those cached files? What happens is when the error is discovered and the path in their AD profile is redirected to the new correct server path, they lose all of their documents that were created and located in the local cached or old server location (obviously, the user is not connected to the old server, the local computer just stores the files somewhere waiting to sync with the now non existent server). They just disappear. Where are those files located on the local computer (Windows 8) and are they recoverable?
